Looking for the fluffiest, most delicious waffles you’ve ever tried? Look no further! These are super easy to make and freeze incredibly well for the perfect quick breakfast. Jeremy and I literally have these every Sunday morning. Enjoy!
Ingredients:
- 2 eggs
 - 1 3/4 cups milk
 - 1/4 cup vegetable oil
 - 1/2 tsp vanilla extract
 - 2 cups all-purpose flour
 - 2 tbsp white sugar
 - 2 tbsp cinnamon
 - 4 tsp baking powder
 - 1/4 tsp salt
 - Chopped Valrhona chocolate to your liking
 
Makes approx. 8 waffles
Directions
- Preheat your waffle iron.
 - Put flour, sugar, baking powder, chocolate, and salt into a bowl and whisk together.
 - Whisk together eggs, milk, vegetable oil and vanilla until combined.
 - Pour the wet ingredients on top of the dry ingredients and mix together with a whisk. Mix until just combined. Small lumps are okay. Do not over-mix.
 - Pour the mix onto your heated waffle iron and cook until brown. Serve warm. If freezing, let cool completely and place in a freezer safe bag or container. To reheat, simple place them in the toaster to crisp them up again!
 
Vegan Option
- Use 2 tbsp of egg replacer or ground flax seed instead of eggs. Mix with 4 tbsp water and let sit two minutes to thicken before using.
 - Substitute oat or cashew milk for regular milk
 
Variations
- Use 1 cup whole wheat flour and 1 cup all-purpose for a heartier waffle
 - Omit the cinnamon for a more traditional waffle
 - Add blueberries, raspberries or more chocolate to take it up a notch!
